Roast Chicken Salad with Melon

We tried out our new Le Creuset today and used it to roast a whole chicken to have with our salad! I loved it, I felt like such a grown up and the chicken came out perfect!

Carrot and Halloumi burgers

My sister sent me this recipe and said it was the best vegetarian burgers she’s ever tried. I must admit, I was a bit unsure as I’m not the biggest fan of halloumi (it’s too squeaky!) but they really are delicious, easy and quick to make and they can become as fancy as you’d like depending on what you serve them with. The recipe recommends a quinoa salad with humus but I’ve made them with sweet potato fries and tzatziki and it’s very, very nice!

Beef Flank Steak with Warm Potato Salad

We decided to try a HelloFresh recipe and I didn’t really know what to expect but it was amazing! I’m not very good when it comes to thinking outside the box with beef, I’ll use minced beef a lot but apart from that beef is either a nice steak or Sunday Roast to me. I wouldn’t do a soup or a salad with beef on my own, I’d need a recipe or someone to give me an idea, so it was great to kick the week off with this.

Mushroom risotto with chicken 

So after eating out for days and days and days I was finally back in my own kitchen today and on the menu was risotto. I love risotto but for years I told myself that it was SO difficult to make and that it wasn’t worth risking as it fails too often. And when I decided to finally try it out, without sounding too cheeky, I realised it was so easy! To quote Take That “have a little patience” and it will sort itself out pretty much.
