We had some sundried tomatoes leftover from last week so I thought I’d do this really tasty and easy salmon dish. Oh, you’re wondering where the veg is? Well, yeah, I forgot the lovely broccoli in the fridge… Ah well!

In a bowl, mix some chopped up sundried tomatoes and crumbled Feta Cheese. I tend to pour a bit of the oil the tomatoes come in for extra flavour and to bind it easier. Place the salmon on a baking tray, sprinkle some black pepper before covering the top in the tomato mix. Cook in the oven for around 15-20min, 175-180 degrees. I served with new potatoes covered in herbs and a bit of melted butter. Yum!
