We tried out our new Le Creuset today and used it to roast a whole chicken to have with our salad! I loved it, I felt like such a grown up and the chicken came out perfect!

I did it quite plain, just rubbed it with olive oil, salt and pepper and stuffed some garlic under the skin.  Served with a beetroot salad mix, melon, tomatoes, cucumber, red pepper, croutons, parmesan and ready made ceasar dressing. Felt so good with a healthy (pretty much) end to the weekend!
