I’ve become quite a big fan of warm potato salads. Growing up my mums cold and creamy potato salad with apples (will make this at some point) was always my favourite and I was never a fan of “plain” potato salads.

I made the quick version here though where I didn’t actually mix everything into a salad, but that was just laziness! The chicken is marinated in lemon juice, olive oil, ginger and parsley. We bought the chicken from our local butcher and it was full of flavour and just a joy to eat.

A good salad becomes a great salad if you add feta cheese to it, so together with beetroot mix, red pepper and new potato it sure was a great (if not mixed) salad.
